I'll second Okami, Beyond Good & Evil & Psychonauts.
I too have never owned a PS2, but have played the second 2 on other platforms, and am avidly looking forward to Okami's re-release on the Wii.
Another multi-platform game you might like: Destroy All Humans. Sort of a sandbox adventure where you play an invading alien, set in the 50s. Lots of 50s alien/communism paranoia jokes, and some good mindless destruction.
Then there's *cough* Guitar Hero - love it or hate it. ^_^ It's much shinier, and supports DLC on the 360, but GH2 on the PS2 is great if you don't have any other consoles...
